With Valentine’s Day upon us, Christmas behind us, and spring just around the corner, I thought today would be the perfect day to share something I’ve been saving for just such an occasion! I actually came up with these Rainbow Sprinkle Cake Mix Cookies back in October, but I didn’t want to share them then…they’re not exactly fall-ish. 🙂 So I stored the recipe in a folder on my computer along with the pictures for a day when we were all dreaming of spring. That day has come!

These Rainbow Sprinkle Cake Mix Cookies are just the thing to cheer up a dreary day. They’d work great for an easy Valentine’s Day treat or just for a fun after school snack.
Recipe for Rainbow Sprinkle Cake Mix Cookies
Ingredients
- 15.25 oz box of Party Rainbow Chip cake mix.
- 3/8 cup oil
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sprinkles
Directions
In a large bowl, beat eggs, oil, and vanilla together. Add cake mix and mix until lumps are mostly gone. Fold in the sprinkles.
Using a tablespoon, spoon out portions of the dough onto greased cookie sheets.
Bake at 350 degrees for ~11 minutes.
Remove and wait two minutes. Then, move to a cooling rack to cool.
